A Taste of The Basque Country at Langham Place, Mongkok, Hong Kong

Introducing the iconic dishes and culture of The Basque Country, the city’s popular all-day dining restaurant, The Place, at Langham Place, Mongkok, Hong Kong, brings guests a taste of the seaside and valley region’s dishes on its buffet tables.

A touch of Spain and France including Kintoa jamon on the bone, salt crusted salmon, risotto prepared à la minute inside a parmesan wheel, paella, empañadas and homemade churros will be available daily this season.

Located in the western Pyrenees bordering Spain and France, Basque Cuisine has been popularised by renowned Catalan Chef Ferran Adrià and other Spanish celebrity chefs making it the sought-after haute cuisine for Spain. Lining up The Place’s buffet tables will be:

Salt Crusted Salmon
Sea salt is used to capture and seal the natural juices of the flavours of salmon, fresh lemon and herbs. An ideal way to cook salmon, keeping it firm and moist.

Mushroom Risotto Parmesan Wheel
The enormous wheel of parmesan cheese serves as both an ingredient and a supersized mixing bowl. At the live station, the Chef spoons warm mushroom risotto into the parmesan wheel bowl and folds it into the sides to create a creamy risotto, prepared à la minute for diners.

Kintoa Jamon
Marbled meat, fruity ham with a deep and strong taste, the Kintoa ham is made according to an ancestral method, known and transmitted through generations by the Basque farmers. Salted with a dry salt, it is cured in the natural drying shed. The Kintoa Jamon will be carved from the bone at a live carving station.

Crèma Catalane
Rich and creamy, the crèma catalane melts in the mouth. Just before serving, it is a tradition to place a heated iron with a spiral shape to brown and caramelize the top.

Alongside the above are the classic Basque show-stoppers, including Paella, Gazpacho, Empanadas, Grilled Chorizo Sausages, Chorizo and Cheese Croquettas, Gambas al Aijillo (Grilled Prawns with Garlic), Homemade Churros and more…

Basque cuisine is an integral part of The Basque Country, on the coast of the Bay of Biscay straddling parts of north-central Spain and south-western France. This culinary heritage is kept alive and evolving by its combination of social traditions with high quality of ingredients.
