In this new role which he takes over from his younger brother Chef Tsang Chiu King, he will oversee two-Michelin star Ming Court’s kitchen operations and Chinese banqueting. In addition, the elder Chef Tsang will be working closely with the hotel’s wine talents to further enhance the pairing experience at the modern luxury Cantonese restaurant.
“We are delighted to welcome the well-respected Chef Mango Tsang Chiu Lit to join Ming Court and lead the restaurant’s kitchen as Executive Chef,” says Shaun Campbell, general manager, Langham Place, Mongkok. “We look forward to working with Chef Mango to elevate the level of culinary excellence and build great memories for our guests.”
As a celebrated Michelin restaurant chef with over 40 years of experience, Chef Mango was instrumental in paving the way for many of the city’s top Cantonese fine dining establishments, including two years leading Michelin-starred restaurant Dynasty, Renaissance Hong Kong Harbour View Hotel, two years at the helm of Cuisine Cuisine, The Mira Hong Kong, six years heading Lai Kar Heen, The Ritz Carlton Hong Kong and eighteen years at the former renowned Furama Hotel, Hong Kong.
In his younger years, Chef Mango was intrigued by the wok-fire action found in local dai pai dongs (open-air food stalls) where he started to develop his interest and passion for Chinese cooking. Outside the kitchen, he is an enthusiastic marathon runner, a frequent wet market visitor and an apt student, having spent his earlier years learning English from his favourite Top 40 chart songs on the radio.
Blending exquisite Cantonese cuisine with innovative wine pairing, Ming Court has been awarded two stars by the world’s most prestigious restaurant guide Michelin for four consecutive years. The restaurant profiles a sophisticated, contemporary menu with influences from China, Europe, Australia and Japan. Gracefully chic and adorned in champagne, mother-of-pearl and moonlit tones matched with rich chocolate hues, Ming Court’s elegant dining rooms extend the hotel’s artistic essences and offer an inviting space for dining, combining modern luxury with contemporary Chinese art.
