PRETTY IN PURPLE: MING COURT UNVEILS THEIR 2010 SPECIAL EDITION MOONCAKES

Two Michelin starred Ming Court has unveiled their 2010 special edition mooncakes – the Purple Princess – available exclusively to just 500 customers.
Crafted by the affable executive chef Tsang Chiu King, the Purple Princess features a centre filled with purple sweet potato and egg yolk matched with a surrounding of sweet cream pastry. Speaking on this year’s special edition mooncake, chef Tsang says: “I love this time of year when I get to play with all sorts of different ingredients to create a distinctive mooncake that tastes spectacular but which is also unique and a little bit intriguing. “I decided on purple sweet potato for the centre as I wanted to try something really different and I think it’s exceptional how the flavour of the potato melts in with the egg yolk and the sweet pastry,” says chef Tsang. Chef Tsang’s iconic custard with egg yolk and the long-honoured white lotus seed puree with egg yolk are also available for purchase. All three mooncake flavours are available for purchase from 20 August and come as a set of eight, presented in a gourmet gift box.
